I haven’t always been a vegetable lover. If you had asked me 15 years ago what bok choy was, I would have replied “bok chwat?” However, as I age, I find myself wandering through the Pick n’ Save produce department marveling at the colors, smells and shapes of vegetables and thinking about where and how they grow. More importantly, I realize that eating them is fuel for my body and gives me more energy and makes me feel happier.
Now that I’m a fan of veggies, I feel very lucky that a part of my job as the Family Meal Coordinator is managing a weekly donation from the Tosa Farmer’s Market, a partnership that goes back six years. Being new to the House, I had no idea of what to expect. The first donation consisted of two very large and very heavy bins overflowing with fresh, green produce. I felt like a kid on Christmas morning as I pulled out perfect heads of lettuce, bunches of swiss chard, bundles of collard greens and bags of spinach. Vegetable heaven!
We use this generous donation to provide our families with balanced and delicious meals and snacks that will nourish their bodies and ease some of the burden of what is often a highly stressful situation. Our volunteers utilize it to create fresh fruit and vegetable salads for our Lunch-2-Go area, we continue to add greens to our premade smoothie packets, and incorporate the fruits and vegetables into healthy recipes for our Make Ahead meals. Our families look forward to having their refrigerators stocked so that they can add these items to their favorite family recipes and our family meal groups will also be able to incorporate them into their menus for our families to enjoy.
We are all so grateful for the Tosa Farmer’s Market and for all the vendors who choose to generously share their bounty with us. We look forward to a very long lasting partnership.
Maggie Flint |Maggie is the Family Meal Program Coordinator. She schedules all the volunteer groups who come to make meals and snacks for our families. She also supports and stewards the volunteers while they are here to ensure they have a positive experience while at the same time, providing an uplifting guest family experience. In her free time, she enjoys spending time with her friends, family, and dogs Bella and Champ, doing yoga, running and cooking.
